
1. Rub the mussels clean and remove the barb
2. Rub the pot with some butter
3. Throw in the shallots, 2 tablespoonful of
parsley, thyme, bay leaf, the vinegar and white
wine. Bring to the boil and add 2 tablespoon of
butter.
4. Throw the clean mussels into the pot and shake
frequently.
5. When the mussels are open remove from the
flame (this shouldn’t take more than 5 minutes).
Remove the thyme and bay leaf.
6. Place the mussels in a large salad bowl. Add 2
tablespoon of butter to the remaining liquid, whisk
vigorously and pour over the mussels.
7.Sprinkle with finely chopped parsley and serve
piping hot.

These are best served with homemade pommes
frites.
